Have you heard of cooking chicken in the ground? This family in Kuala Lumpur, Malaysia runs a restaurant specializing in the traditional cooking of what is known as “Beggar’s Chicken”, where the chicken is pre-ordered then placed into a clay casing along with Chinese medicinal and culinary herbs, then placed underground in a bed of burning coal. The chicken is cooked for 6-8 hours. The chicken used is wild chicken whose meat is known to be tougher but surprisingly due to this unique method of cooking, the meat turns out super soft and flavourful.
